Recommended Menu — Restaurant Mizuguruma
Our restaurant “Mizuguruma” (meaning “water wheel”) serves seasonal dishes highlighting the finest Fukui ingredients — Echizen soba, freshly-caught river fish from the Asuwa river, and vegetables grown in the Ichijodani valley.
Signature Dishes
- Oroshi Soba — Cold Echizen soba topped with grated daikon radish, a Fukui signature dish.
- Sauce Katsudon — Fukui-style pork cutlet rice bowl with a sweet-savory sauce.
- Ayu (Sweetfish) Set Meal — Salt-grilled sweetfish from the Asuwa river, served in season (June – September).
- Asakura Zen (Seasonal Set) — Our chef’s tasting selection featuring the best of the current season.
- Vegetable Tempura — Local vegetables freshly picked from the Ichijodani area.
